Had to do an encore spatchcock chicken. My parents requested it after I described how unbelievably good it tasted. Also included chicken wings, some sushi, macaroni salad/shrimp, and chicken fries.

My parents are a believer in spatchcock chicken. They could not believe how juicy it was. The hickory chips were deeply infused into the chicken. I let them take the left over home; wait til they chow down on the cold chicken tomorrow.

    What a feast you prepared for them.
    You will be seeing more of Mom and Dad now.
    Which is always a good thing.
    Thats how I get my boys to visit more.

    Did a spatchcocked chicken a few weeks ago, weighted in at 5 pounds.

    400 degrees for 1hour 40 minutes, direct and it was outstanding.
    I didnt take any pics, me bad.
