Should I do indirect at 375 or direct at 350 and turn a bunch of times?
Internal of 140?
And how do you know you are getting an accurate reading with the spinach and cheese in the middle.
Any help will do, thanks in advance.

yesterday at 350/400 raised grid direct and rolled around. the 140 worked fine (got that from Celtic Wolf yesterday).
WATCH closely at 130 or you will loose it fast to higher temp.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd. -

140 is good
got to make sure your probe is hitting meat and not spinach. ...poke it a few times to be sure you are getting accurate meat reading. .. . -
LOL. ...always works that way. ..ask the direct/indirect question and get two opposite answers. . .. real answer is, you can go either way. ...

I do them indirect 350-375 and do not turn. The goodies fall out.

I did mine direct last time, but never turned, going to try indirect with some rasberry chipotle sauce/jam, mozzarella, roasted red pepers, onions and some combo of DP.
Hopefully post pictures tonight.
