Saturday had the weekly dinner party and the menu was:
Triple-tartare (Salmon, Blue-fin tuna, Black-bass), salty wafer.
Curry lentil filled-piquillo peppers, baked goat cheese, icewine reduction.
"Club sandwich". Slow olive-oil poached salmon(gravlax), brioche, tomato confit, bellotero ham.
Slow butter poached/grilled lobster tail on lobster cream rotini, parmessan cracker.
Kobe ribeye, crystalized onions, red wine reduction.
Triple Profiteroles (coconut, french vainila, pecan butter ice cream) chocolate sauce.

Ok I'll agree, but using Kobe beef for a hamburger is like... like cheating LOL. But you are more than welcome to cook some here at the Chicken Ranch anytime you're up this way. I'm sure my "Coop Girls" would love to participate LOL.

You've got to be kidding. I have a great reputation amongst my friends that I can cook with the best. On the other hand you, my firend, live in a completely different league. The Major league in my opinion.
Keep up the cooking, and I'll be discussing a trip to Monterrey to partake in your restaurant with my wife as soon as you open.
