brisket flat on home stretch.....

It's about a 7 pound choice grade flat from Sams and went on the large egg this morning around 1 AM. Now going on 11 hours and it is 185 internal. This flat has a good chunk of point attached and you can see the moisture coming to the surface at the center top. This might be a good one!
Can't tell how many times I wanted to snag the small hunk of bark right in front.....It smells great and just went into some foil for the home stretch.

Looks great, are you cooking to 195/200? I've not not done a flat yet becasue they are so well trimmed.

I picked up a whole brisket at Sam's yesterday and took it off the egg a while ago. I dug through the whole batch looking for a Choice whole brisket. All of their flats are Choice and all of their whole briskets are Select. I have no idea how meat is graded and was wondering if two grades can come from the same cow. The way the briskets and flats were packaged, they looked like they could have had the same origin - but maybe not.

No the steer is graded as a whole animal and then processed. It is graded after the kill. The brisket whole being from select beef is probably packer cuts that usually go to purveyors that make corned beef. pastrami and luncheon meats. It is till fine for BBQ and Smoking slow. The difference between choice and select is flavor and tenderness. Select can get flavor from the smoke and seasoning.

my sams club is the same way, choice grade flats and select grade packers....flats run about $2.90/lb. For choice grade packers, it is my local costco.

I try to take them to just short of 200, the trick is if and when to foil. After foiling this one, it was on the egg for only half hour. You can alwasy buy a packer and trim the point for burgers. Twww.ceramicgrillstore.com ACGP, Inc.

Thanks for the info, I would like to try a flat as even a small packer is alot for a small guy like me. I don't have any company over as I don't run my air conditioner till maybe August when the humidity moves in from the monsoons.
Sorry to hear of your mothers passing, I didn't know till I read the rest of this thread.
