I did the Cobia today and it turned out great. Marinaded in mixture of lime juice and zest, cilantro, olive oil, salt, pepper and diced jalpeno for 20 min. Cooked direct at 400 and finished with remainder of mixture spooned over fish.

I only had Jack Daniels pellets so tried that for smoke. Worked ok.

Started with a dozen raw oysters during cook.

Pretty good Wednesday meal.
