Did these tonight on the Egg at 325. They were awesome.
Stuffed with spinach, celery, mushrooms, cheese, walnuts and more.

:cheer: yummy! How in the world did you keep all that stuffing inside? :silly:

Notice the large tooth picks? I ran them in to form an "X" that helped keep the stuffing in. I cooked them on a rib rack inverted and left them in one place until done. They were juicy and had a ton of flavor. I used apple wood, and wine barrel wood for smoke and added flavor.
