It is a lovely rainy day in MS for egging... Stabilized at 250, I guess I will let the ribs tell me when they are done...

Well, shoot... I believe I need to calibrate my dome thermometer and get a turkey roasting pan for a drip pan. This did NOT work out as I planned, but was totally operator error... The drippings on the side of my drip pan caused the fire to heat up...
Good thing I like things well done... :pinch:

You can count me in. :woohoo: I am working on the Emerald Coast Eggfest here next spring. Cuziz P.O. box is Collins but I think he is between Collins and Hattiesburg.

Pretty funny, I am originally from Collins... My family has had the newspaper there for over 100 years...
If you get an eggfest scheduled, count me in... Sounds like fun!!! -
Those still look pretty darn good, Anna. If you can wrap them and keep 'em warm until your diners are ready for them, I think you'll have some happy folks.

Looks are not everything, it looks like the will still eat. If they are not the would still be great in a pot of CWM's beans.

I have them foiled right now, hoping they will get a little more tender... If nothing else, enough bbq sauce and all will be right with the world...

How did your brisket (I think that was what Bubba Tim said ya'll were cooking) turn out? -
Anna......that's it.....you have to let your cook tell you when it's done....no precise recipes here.......I agree 100%!!

Don't look bad at this end Anna. Serve them on up, maybe with a little sause and you will have much better feed than you will get anywhere else!

If you don't like well done, these were not your cup of tea. For me, they still tasted great... Gotta love the egg, it saves you from yourself sometimes!!!

LOL!! Got to agree on that one! Short ribs are an amazing cut of meat. They can be cooked SO many ways, and always end up delicious! Next time you see a pretty package like you found today, try them again.

yes, you can post pics thru facebook...not sure how, but my daughter (General-Lee Eggin') takes pics on her phone and sends them to facebook and then puts them on the forum -

My family would love those ribs done like that! I see those at Sam's all the time, and I think that I tried cooking some a long time ago, but they were just a bit too greasy for me. I'll try them again, but I want them to be crispy-looking like the ones you did. They would enjoy them a lot.
