It says beef short ribs...

Am I supposed to cut these up into smaller pieces or cook as is? If as is, estimated cook time should be 3-4 hours at 250? The plan is mustard and Dizzy Dust...

You don't need to cut them, but you can. Personally Cowlick might be a better rub for the beef.

Those look fantastic.
Just don't over cook them. There will be a lot of drippings. I love Dizzy Dust on them and Cow Lick is also excellent. A bit of cherry or apple wood.

I love beef short ribs. Steven Raichlen has an excellent recip[e for those in his BBQ Bible book. He basicallly cooks them like steaks, high heat (direct) 4 to 6 minutes a side. Fantastic!

Beef short ribs can be cooked quickly like a steak or long and slow like a pot roast. Anything in between and you will have tough, dry and gray. I prefer them braised until nearly tender and then charred quickly on the grill or smothered in a rich sauce with some mashed potatoes.

I did these just like pork ribs: 3-1-1. Dusted with DP Cowlick

I think I read here that they call the ones I did "English cut" or something like that. They're the only beef rib cut my local Sam's sells. I think the ones you have there are the usual cut.
