Good Friday morning,
I have some dough proofing in the fridge for tonight's zah. I used Fidel's MM recipe.
My questions are,
How long do you let the dough sit once you take it out of the fridge?
I assume there is no more kneading? Just start forming the crust?

I let mine get to room temp or close and it works fine with the dough I make.

I would try Westshore Pizza. It's good enough to kill for.

I let the dough warm for 2-3 hours before using. You need to let it sit longer than that if it has not at least doubled in size.
When you form it just use your hands to remove any large bubbles, but don't punch it down or deflate it much. If you use a rolling pin you won't get much spring when you cook it.

One question do you dock the dough after getting the dough stretched out to size?

Nope. If any large bubbles pop up when cooking just poke them with a fork.

By your statement are you pre cooking the dough then putting the fixings on? I have always docked my dough and never tried without doing it.Will give it a shot and check it out.Thanks for the tip.

I don't pre-cook dough.
The bubbles are rare, but they do pop up from time to time when cooking the pie.
