I've only used mine a few times - they are nice. I seasoned mine with Crisco just like seasoning a CI pot.

Back in Houma. Looked at 11 houses on Thursday. Narrowed to two by the end of the day and I think my finance minister has cut it to one. Alternatively, we may build. We're tidying up a few things here before putting our house on the market. We are looking forward to a new chapter.
Up until I got an egg, I just made my roux in whatever pot I was going to cook in on the stove. I have made a couple in a CI pot on my SBGE. I was a little hesitant to make one on the Egg at first because of the amount of "dome open" time and the heat getting out of control. But it has actually gone quite smooth - probably because I was used to making a roux with high heat anyways. Both times I transferred the roux to a different pot at lower temps on the XL. -
glad it arrived in good shape....my wife marvels at how much paper we use to ship stuff.
