i'm finishing up 2 butts here in a couple of hours i'm planning on serving for super bowl. i was planning on vaccuum sealing and freezing for 3-4 days and thaw on super bowl sunday and serving. however, what do the experienced ones think about just vaccuum sealing and keeping in refrigerator between now and then? which would result in tastier meat?

foodsaver it leave it in the frig, then simmer in the bag the best and most gentle way to reheat, if you have to reheat. reheat to 165 degrees

Absolutely no reason to freeze the meat for 3-4 days.

I agree. I have kept fresh sealed bags in the fridge meat drawer for 2 weeks with no problems.
