Red Snapper and Deer Round Roast?

OK enough crying over spilled I mean cracked cast iron grid. I have set out to cook four red snapper fillets and a deer round roast my son requested. Haven't decided how just yet thinking blackened snapper and maybe pulled deer. I have never tried this does anyone think it will not work. finish pics and details after the cook, but here is what i am starting with.

I think venison is too lean to pull. Not enough lubricating and moistening fat. I'd do a venison pot roast. Very nice this way with veggies stewed along.
