Flatiron steak

Today is one of thoes rare days when I get to locate my workstation about 50' from my egg. So after a morning out with customers, I am here for the rest of the day. Of course, the boss (read wife) took advantage of this. Called ant told me to get a flatiron out of the freezer and cook it tonight. I usually just dust these with cow lick &/or raising the steaks and cook to about 125. Anyone have anything special I can do with it since I have a little prep time on my hands?

You're on the right track for preparation. The only thing I do slightly different when I have a short preparation time is to coat with a 50/50 mixture of Dale's Low Sodium Seasoning/Extra Virgin Olive Oil, followed by a heavy coating of Raising the Steaks. Yum - my teenage daughters eat it as is, and will often slice it the next morning and make a beef soft taco with refried black beans & shredded cheese. :woohoo:
