Merry Christmas and Happy New Year to everyone. I've been hanging around, but not able to participate with a laptop that was in for repairs. With that being said, here'e what I've been up to....
Ice free for the first time since 1 1/2 inches of hail had me frozen for a while...
Then I was able to make some ribs...2 racks with an aisan sauce, 2 with rasberry chipotle...very good!
Then I tried something completely new to me. Lamb shanks made with this recipe...

I would recommend these, they were easy and came out great!
Rubbed....
On the egg, indirect, 300 degrees, pecan smoke...
One hour with the smoke, then 75 minutes wrapped in foil with a 1/4 cup of rice wine to braise for a bit. Then sauced...
and finally ready for the table. Even the kids, 4 & 5, loved them!
New Years Eve was a simple tri tip...
And New Years Day was a nice pork loin roast, indirect with a new rub that I just thought would taste good....thankfully, it did!

All of it looks good but those Lamb shanks and the Pork Loin look amazing! Looks like winter hasn't blasted Omaha yet, but it's still early. We have family that remains there after my father in law's days at Offut.

Some very nice cooks there. I've been waiting to see how the lab shanks turned out. They looked great I am surprised your kids liked them. i'll have to try them soon. -

Thanks everyone...the shanks were really the best of the cooks. The only thing I would do different is make only half oc the BBQ sauce. The one change I did make, is to take the drippings from the foiling stage and added them to the sauce...then reduced is. Very rich flavor!
