Picnic shoulder, that is. Sorry no pics, just thought I'd report on another cold weather over-nighter. Had a 10 pound picnic, coated with Dizzy Dust. Got the Medium loaded up with lump Saturday at 2 in the afternoon, full enough I had to pack it down with the plate setter when I put it in, along with a few chunks of peach and hickory. Got the fire stable about 3, winds blowing about 25, temp dropping into the 20s, and put the meat on.
Wind kept blowing, temp kept dropping, but the Egg rolled on. Got up a couple of times during the night to check it, and had to open the vent a little, but it kept pretty steady in the wind as temps dropped to about 8, wind chill 0 or below.
Lost the fire pretty much at 7:30 this morning, but the meat was at 195, so I pulled it at 8. Foil-towel-cooler 'til 10, and I've got some nice vacuum packed Christmas presents :)
Been a lot of questions lately about cold weather cooking. With enough lump packed in, and a little attention, it will work!
