leftover pulled pork

Did the first big feed yesterday. Hosted the fantasy football league yearly party. Cooked 2, 8lb butts. Everyone liked them so well, I received marriage proposals and other offers of wealth and power.
Anyway what are your favorite way to fix leftovers?
I have about 1 1/2 lbs left.

    We often nuke our leftovers. I mix in some Elder Ward's North Carolina sauce and BBQ sauce (the kids preferred Sweet Baby Ray's Original). Warm it up in the microwave and it's good.

    You just reminded me that it's time to take the PP out of the freezer.

    I like to throw it into a good pot of chili. This recipe uses 4-5 lbs pork. OH, what to do with the leftover meat from trimming pork ribs! Use 1/3 the ingredients for 1 1/2 lb pp.

    INGREDIENTS:
    4 Lbs. Pork Riblets, Trimming of St Louis Ribs
    6 Lbs Pork, Country Ribs, Bone in
    1 Cup Green/Red Bell Peppers, Chopped
    4 Large Onions, Coarse Chopped
    2 Ribs Celery, Chopped
    3 Tbs. Jalapeños, Chopped
    2 Cans Beer
    2 Bunches Cilantro, Chopped, Leaves Only
    2 10 Ozs Rotel, Original
    4 14 1/2 Ozs Tomatoes, Crushed
    1 14 1/2 Ozs Stewed Tomatoes
    3 Cups Tomatoe Juice
    2 4 1/2 Ozs Can Green Chilis, Chopped
    2 15 1/2 Ozs Can Kidney Beans, Red/Pink, include liquid
    1 7 Ozs Can Chipolte Sauce
    2 Cups Pork/Beef/Chicken Stock
    1 Tbs Red Pepper, Coarse Ground
    3 Tsp Chili Powder, Chimayo
    2 Tbs Pepper, White, Ground
    2 Tsp Cayenne pepper
    2 Limes, Juice of
    4 Tsp Cumin
    3 Tbs Garlic, Coarse, Chopped
    4 Tbs Oregano, Mexican
    Salt/Pepper to taste
    1/2 Stick Butter




    Procedure:
    1 Cook the meat in a pot on the stove for about 2 1/2-3 hours. Turn off and when cool, drain the liquid--save some for the stock, and degrease it, separate the meat from the bones and fat. yielded about 6 cups of meat.
    2 BGE 300°F-325°F, indirect, plate setter legs up, spacers under the DO, no top. I prefer to sauté the veggies on the stove, but the egg will work also. 2-3 pieces of apple wood for smoke flavor.
    3 In heavy 9 quart Dutch Oven, saute onions, celery, garlic, add tomatoes, liquids, spices. Cook on simmer for 3 hours. Stir about every 30 minutes so it does not stick.
    4 After 2 1/2-3 hours, add cilantro, pre-cooked pork, beans w/liquid. Cook 2 more hours., may need to add some more tomato juice if it starts to get dry. Add 1/2 stick butter at end for texture.Serve or reheat second day for better flavor. Freezes well.


    Yield: 9 Quarts
    Preparation time: 45 minutes
    Cooking time: 5 hours
    Ready in: 6 hours

    I just served some left over (Cooked yesterday)Pulled Pork by warming it in a crock pot with a vinegar sauce. It turned out great! Not quite as good as right out of the egg but good enough to get compliments.

    Besides the sandwich ideas I freeze it in smaller quantities to use in ABTs, Rebel Hash, and thirdeye's recipe called "Keri's Hog-Apple Baked Beans.

    Pizza all the way! use your favorite crust and top with your favorite BBQ sauce and then the pulled pork. thin sliced onions are good too and then your favorite cheese :) man am I hungry :(

    There's a recipe floating all over the forum in various places on the forum for something called Dizzy Pig Nad Stew. Here's one post that it's in: http://www.eggheadforum.com/index.php?option=com_simpleboard&Itemid=55&func=view&catid=1&id=535793

    I take the same recipe and substitute left over pulled pork for the sausage and left over spatchcock chicken for the thigh trimmings. Since both are already cooked, skip the browning step. I call it Oink-A-Doodle Stew.

    Potatoes, Baked, Twice, Bente


    2 Baked Potatoes split in half
    1 cup Cheese
    1 cup Leftover Pulled Pork
    1/2 cup Sour Cream
    3 tbs butter
    salt and pepper



    1 scoop out insides of potatoes put in a bowl. becareful not to tear the skins add rest of ingredients except half of the cheese and mix well
    2 mix together fill back into the skins topp with cheese
    3 cook indirect at 375 for 40 min until the cheese in melted
