Easy Wings...yummy!

Wings:
Wash, pat dry
Mix 50/50 Old Bay and Brown Sugar
Wings in big plastic bag, shake with EVOO
Dump in spice mix, shake to coat
Fridge for an hour+

Egg setup:
350 indirect
Wings over plate setter 15 minutes
Spin grill 180 degrees (angular, not a temp)
Cook 10 more minutes
Flip wings
Cook 10 minutes
Spin grill 180 degrees
Cook 10 minutes

Pull of and let sit 10 minutes. Easy and yummy.

    I flipped them after 20-25 minutes. The key is keeping them over the plate setter and away from the exposed outer edge.

    20 wings, and only 4 left. I want to use the excuse that my 14 year old plays football......but I had 8.

    Being 14, the young'un has trouble admitting that dad does anything well. Not this time, he actually said he wanted more tommorrow.

    one question... if you have the platesetter why the spin? usually when i am at 350 the heat seems to circulate pretty good... i am not being a smarta$$ but rather a dumba$$.... because i do the spin move sometimes but i am usually direct when i use that move..

    those look like some tastey wings though..

    Wings, Chicken, Georgia Red, Wise One

    I think you'll like this, it's definitely one of the best I've ever tasted. It's not over-poweringly spicy but quite flavorful.


    INGREDIENTS:
    3-4 lbs chicken wings
    3/4 cup soy sauce
    1 1/4 cups water
    1/2 cup Texas Pete hot sauce
    1/2 cup lemon juice
    1/2 cup Hot and Spicy V8 juice



    Procedure
    1 Cut the wings apart at the joints discarding (or saving for stock) the tips.
    2 Combine marinade ingredients in a large container with a lid. and place the wings in the container making sure they are all covered with marinade.
    3 It is best to let the wings marinate in the refrigerator overnight (or at least 2-4 hours).
    4 Remove the wings from the marinade and sprinkle with Big Green Egg Gourmet Seasoning (or your favorite rub for chicken).
    5 Grill indirect at about 350 deg. for 15 to 30 minutes on each side. If grilling direct, monitor carefully and turn every 10 minutes.

    Personally, I like them very crispy (an hour) but some like them just barely browned (30-40 minutes).

    This does enough wings to cover the grill of a large BGE with some sapce between the wings. You could probably double the recipe and get them all on, but you would be overlapping some.

    I do have to try the Georgia Red eventually.

    For some reason, whenever I open the Egg I spin the grid. Just a habit.

    The wine was "before" the wings tonight. Beer with em' :laugh:

    I went to Moonstones in Chelmsford, MA last weekend and had the best wings I ever had. I quizzed the "raw bar" guy and remember him saying brown sugar, Old Bay...darn, why did I have that 3rd martini? It must have been the 3 huge olives :woohoo:

    yea blame the olives ;) i hate it when that happens... :P


    i can see spinning the grid if you are cooking hot dogs or hamburgers direct but when you are indirect it is more like your oven.. now i admit the back is warmer than the front but at 350 it doesn't seem to matter much.. just my $.02 ... don't pay too much attention to me B)

    Did I hear a rumor (likely started by stike) that you where having a mini fest out there in Townsend? What date? What time?

    How much beer do you want stike to bring? :evil:
