Spatchcock Chicken and Conecuh Sausage

Nothing special, just the old standby spachcock chicken with DP Shakin the Tree and some Concecuh sausage. My kids had some friends over and based on the pile of bones that was left they kinda liked it. :laugh: Most of the sausage did not make it for the picture. It seemed to be vaporizing as it was cut up while we were waiting on the chicken.

It is a local smoked sausage made here in Alabama. They offer several different flavors. It is definately a local favorite. We grill it for breakfast at the plant during shutdown a couple of times per year.

The hot is fantastic in a low country boil. Shrimp, taters, corn...... I think I need to make a run to the grocery store.
