Do you go by time or by meat temp?
I am sitting at 180 degrees meat temp and it has been on for 10.5 hours.
it is 2 - Nine pound peices.
I know people say 2hours per pound.
that would mean it would need to be on for another 7.5 hours.
it has been cooking all the entire time at a dome temp of 225-250.
Need a bit of professional help here.
thanks

Big Papa,
I'm no expert on butts but from what i have been told is to cook it until an internal temp of 195-200 in which yours may be going through it's platou so my answer would be to wait it out until it hits 195-200 just my $0.02 -
You are almost there. When it hits 195 pull it.

I go by meat temp. The 1 1/2 to 2hrs per lb. is just and estimated average. Seems sometimes you get one that will cook in less than 1 1/2 hrs/lb and every once in awhile get one that seems to take forever. Go by temp and you will know when it's done. Mike

I take off the EGG at 190ish, double wrap in foil then a towel, then put it in a cooler for a couple of hours. You should then be good to go. happy eats, Brett

BP, go ahead and kick the dome up to 275*...you very well might be butting up against a low grate temperature right now. It won't hurt the butt at all, and may help keep it from drying out.
