Naked Chicken

Family likes their Chicken Breast, Thighs Naked (BONELESS & SKINLESS).
Marinated in Italian Salad Dressing and dusted with Tony Chachere's Original Seasoning.
Cooked to approximately 165 Breast, 185 Thighs on raised grill (Adj Rig) at 325-375.
Chicken is tough and somewhat dry. Also tried thighs on top level of Adj Rig and Breast on mid level of Rig same results? Rotated Rig to avoid hot spots.
Would appreciate any suggestions on Set Up, Cook Time or Method to bring Chicken to correct temperature and keep Family's Naked Chicken moist and myself out of the chicken coop?

I don't do a lot of naked chicken but have done some breast when I was doing ribs. I smoked them along side the ribs at 220 for a couple of hours. They came out very moist.
