I don’t know if this person looks at the forum but if she does I’d say thanks for the info and let her know how great her example worked out.
She cooked Paella at the Midwest Eggfest with an inverted plate setter with the Paella pan sitting on the grid. Tried this and it worked great.
This method is actually easier then on a stovetop. I worried about temperature control but it was almost automatic. The added smoke flavor really added to the dish.
