Another Wok Question

In reading up on wok cooking they suggest one with a long handle. If using a wok on the spider, would the wok be able to sit level, or would the handle get in the way?

    Depending on how you are cooking or what you wish to accomplish the handle will eventually burn.Plus you can not close the lid or use a bamboo steamer with it and close the top. The double ring handle 14 inch for the large is my weapon of choice. Works very nicely with the spider. They may be found in garage sales or consignment stores or here

    The spider is round and your wok sets down in it. A long handle might get in the way. My wok has two small handles. BTW I bought a round bottom wok from tjv when I bought his spider.

  • Yes on the wooden handle burning. I have seen a few online with metal handles. I did not think I would be closing the lid because of the need to constantly tend to the food being wok'ed. Had not thought about the bamboo steamer. But with that, would'nt you put a lid on the wok itself? Thanks for the input.
  • I use the lid I got with the wok when I need it. IMHO, closing the dome isn't the same thing.

    the steamer has its own lid and does not require a metal lid like the wok.

    i have both the metal handle one and the hooped handle one. if there is an asian cooking shop near you buy it there, i paid about 22 dollars for the 2 of them in down town boston, they are cheap. i use the long handle one more and cook with the lid open for stir fry over very hot heat and need to be able to quickly move the wok out of there if i need to. if your going to be cooking dome closed as alot here do, get the hooped version
