1/2 cup peach preserves or marmalade
1/2 cup bourbon plus 3 ounces to shoot as you go
1/8 cup peach shnapps
1 lemon juiced
1/2 orange juiced
1 small chopped onion
red pepper, salt, black pepper and cinnamon to taste
Combine above in blender. Place chops in your favorite marinading dish. Cover. Mix Bourbon to drink while chops marinade for the next 4 to 24 hours.
My chops are resting well in the frig. Lets see what tomorrow brings!
PS I doubled the above recipe adding a small fresh peach to use as a fresh glaze tomorrow.
