Ancho Chicken Quesadillas

I just made this on stove top, but I think this would work really well on cast iron griddle on the egg. I cooked boneless skinless chick brsts last Sunday and used these left overs for the chicken, diced up, of course. This ancho product really tastes great. This could also be used at Egg demo's.
Ancho Chicken Quesadillas

Ingredients
2 Tbs Vegetable oil
2 lb 4 oz. Chicken meat, cooked, sliced
1/4 cup Minor's® Ancho Flavor Concentrate
24 10-inch Flour tortilla
3 lb Monterey Jack cheese, shredded
3 cups Onions, sliced thin, sauteed
1 Procedure
2 In a sauce pot, heat oil. Add chicken and Ancho Flavor Concentrate. Heat until hot and well blended. Set aside.
3 Assembly for 1 quesadilla:
4 Place 1 tortilla on griddle; grill 30 seconds.
5 Place 4 oz. (1 cup) cheese on tortilla. Top with 3 oz. chicken and 1 oz. (1/4 cup) onions; cover with second tortilla.
6 Cook 1 minute; then turn over quesadilla and cook additional 2 minutes.
Servings: 12
Yield: 24 Quesadillas
Cooking Tips
May also be prepared by filling the tortillas ahead and grilling them to order.
