Grilled Catfish

Finally decided to gill some catfish on the Egg for dinner. I used the ribbed side of my cast iron griddle.
Sprayed the griddle with BBQ Pam and heated it to about 500°, a little butter on the fish (I'll use olive oil next time) and sprinkled good with Shakin' the Tree. About three minutes flipped and went for two more minutes.
Pretty darn good. I'll make fish tacos with the remaining pieces.

Nice char on the fish! My parents went down to the bottoms Friday and cought a bunch of red ear, croppie, 1 bass and a cat. Had a fishfry over there tonight. Not as healthy as yours but sure was good! Going to do some fish on the Egg this week.

Yea, I can cook when my little pea isn't busy roll'n around in the gray-matter place. It makes me dizzy and I have to take a nap or something.

If you use butter, use plenty of it. Or use olive oil. That's what I plan to use next time.
Also, spray some Pam on the griddle.

Spring "Never Do Something Twice The Same Way - Boring" Chicken -
Living in the South, I grew up eating lots of fried fish, but now-a-days I really have a problem eating any fried food. I can do it but it has to be good and even then I can only eat a little bit.
These were frozen farm raised. Kroger. I wanted to try them in a fish taco if I had any left. Got three pieces left. Good number.
I have a feeling you won't have a problem cooking them up right.

If you like spicy with a little cajun twist, try doing catfish fillets with Swamp Venom on both sides (EVOO), direct on a grill topper. Definitely good eating catfish. thanks rc
