Just finished the table yesterday for my Xl and new Lg Egg

Wife & I decided for 1st cook on Lg to break it in: Rosemary Herbed Bread and Salmon with Basil Cream by Large Marge. It was soooo good.

Salmon with Basil Cream
The Sauce:
1 cup Cream
20 fresh basil leaves pureed
1/3 cup white wine (I used a Pinot Gris and drank it over dinner)
2 cloves garlic.

1 Transfer puree to a small heavy saucepan and stir in the cream, heat to simmer, reduce by 1/2 , takes about 15 mins.
2 Whisk in 1tbs lemon juice and 2tbs unsalted butter. Remove from heat and cover.
3 The Salmon:
4 Marinated for 15 mins (while making sauce) with 2tbs lemon juice and 2tbs EVOO, salt and pepper. Once sauce was done, put fish on the grill.

Cooking Tips
Set up Egg for indirect cook, 375 Dome on extended grill, 10-20 mins depending on thickness of Salmon. Done at 135 degrees on Thermapen.

Recipe: Rosemary Bread

1 Tbs white sugar
1 cup warm water
1 (.25 ounce) package active dry yeast
1 tsp salt
2 Tbs butter, softened 2 tablespoons rosemary
1 tsp Italian seasoning
3 cups bread flour
1 Tbs olive oil
1 egg, beaten (optional)

1 Dissolve the sugar in warm water in a medium bowl, and mix in the yeast. When yeast is bubbly, mix in salt, butter, 1 tablespoon rosemary, and Italian seasoning. Mix in 2 cups flour. Gradually add remaining flour to form a workable dough, and knead 10 to 12 minutes.
2 Coat the inside of a large bowl with olive oil. Place dough in bowl, cover, and allow to rise 1 hour in a warm location.
3 Punch down dough, and divide in half. Line a baking sheet with parchment paper. Lightly grease paper. Shape dough into 2 round loaves, and place on the baking sheet. Sprinkle with remaining rosemary. Cover, and allow to rise 1 hour, or until doubled in size.
4 Indirect, raised grill, 375 degrees F (190 degrees C).
5 Brush loaves with egg. Bake 15 to 20 minutes in the preheated oven, or until golden brown.

Nice table, and unique to boot. Giving me ideas for the next iteration of my table to hold a lg, sm and mini.

Great job on the setup, and congrats on the LBGE+adjustable rig! Thanks for posting the pic--I didn't realize how much more squat/shorter the XL is compared to the Large.

The dinner looks delicious, too :)
