To all that replied to my earlier posts about Creosate and Leathery Chicken Skin,
Thank you, thank you, and again I thank you. While not everyone had the right solution, all of you offered your assistance, until I finally figured out what it was. Indeed it was trapping smoke to long in the dome and not allowing proper clearance.
It appears alll along I've been oversmoking food by keeping the daisy wheel open very slightly. This in turn caused the leathery skin on my chicken and the subsequent harsh taste. To think all along it's been this simple.
By the way, the chicken is even better than all of you have said it was. Crisp succulent skin and a slight pinkish hue to the meet. And oh yes...dripping with juice.
Can't wait to do a turkey next.

Thanks for all of your help. Truly appreciate it. Look forward to trying your recipe once I've had a few successful runs with the current recipe.
Any idea if a small Turkey can essentially be cooked the same way I cooked my chicken last night. Thanks in advance for your sage advice.

Well go ahead and blow because the MadMax turkey is a Cult signature dish. Every Newbie should be required to cook one AFTER they have mastered temperature control, fire building and proper fire lighting for all occasions.
