Pork Butt help.....please

Cooking two butts tomorrow. One is 8lb and the other is 7lb. I don't have the Maverick thermometer yet so I will be winging it and checking the internal temp with a meat thermometer 6 or 7 hours into the cook. What temp in the dome does the board recommend? I do have an oven leave in thermometer, would this help?

Hey Bama.I do mine at 250* dome.I use a leave in meat thermo also.It works good for me.If you set it up right,you can check the meat temp without opening the dome.Just use a flashlight down from the top.

I did nearly the same exact cook last week. I did two butts totaling 15.5lbs, and one was slightly bigger.
I kept the dome at 250 the entire time and pulled both of them when they hit 200 internal temp. I then threw them in foil and a cooler for a few hours. By the time I was ready to pull them, they were pretty much falling apart.
Just as a point of reference, my smaller butt (probably around 7 lbs) took 16 hours at 250 to get to 200 internal and the larger one (probably 8-9lbs) stayed on for 18 hours.
