I would appreciate it if someone would give me a step by step procedure to Hot Tub steaks which have been vacuum sealed in food saver bags.
Internal temp to take out of the water.
What temp in BGE for searing.
etc

I drop them into my 102F spa and take out about an hour later. My faucet temp is 107F so plan "B" is to run hot water into a container and have the bag in the pot.

Like Richard said, 1 hour at 100 degrees then quickly sear them for 90 seconds a side then rest them under foil for 10-15 minutes. -RP

I do mine in Zip lock Submerge them in the water until you get all the air out. Leave at 101* for 1hr.
Grill for 90sec. per side then foil for 15min.
Med. rare.
