Tonight's dinner...pretty tasty!

I guess that everyone will be having the meat sweats from tonight's dinner. Not a bad price on these guys:
Done deal:
Some burgers for the kids. We make them a bit smaller so that they'll fit better on the Hawaiian rolls:
Sweet onions, button mushrooms with EVOO and some Benoit's cajun seasoning, cooked in a small cast iron skillet on the SBGE. I actually had both of them going for this one.
Almost time for the Texas Eggfest! Looks like my old standby gasser will be going bye-bye to make room for the XLBGE.

The regular price on the USDA prime cuts at my grocery store for ribeyes is $16.99/lb I found these in the shrink-wrapped section, not under the glass, although they were probably under the glass the night before. The choice-grade cuts from Sam's are $8-10/lb, depending on the cut.

I was gonna say, $8.50 a pound for USDA Prime is pretty darn good.

What part of th country are you from? Got a whole ribeye choice at sams 2 weeks ago under 6.00 a # Sioux city IA.

Big difference between choice and prime beef. Several dollars per pound generally. Also a big difference in the per pound price buying a whole primal and buying steaks that have been cut and trimmed from that primal.

I just bought some a prime rib roast here for 5.99/LB. Brought it home cut into one roast and four 1.4inch steaks. :laugh: :evil:

what do you pay for prime?
i never even SEE it around here, other than dry-aged. and that is relatively "cheap" at 19 a pound (compared to what it goes for in the city)ed egli avea del cul fatto trombetta -Dante -
"prime rib" does not mean the beef is "USDA Prime", choice beef from the rib eye can be sold as "prime rib" because that cut has always been know as a prime chunk of beef. grading came later.
it's higly likely that any 5.99 prime rib is actually maybe even 'select', not even choice.

That's what I'm constantly looking for at my HEB. I then take them home and let them sit in the spare fridge for several days before eating or freezing. It does make a difference and I'm still breathing. Momma won't touch it. Here's a pic of mine vs. here fresh, prime sirloin. Ah, the aroma and flavor is so good.

Thanks, Mike. That aged steak in your pic scared me...should I not be throwing out cuts that have that sort of color? I run back to HEB with the meat and receipt in-hand when I see a steak like that. Does cooking it at TRex temps kill off anything that may be living there? You did mention that you're still kicking :P I guess I answered my own question...
