I am new to Eggs and new to non-gas cooking....I am very excited about getting an Egg and getting started!!!!
I am here to learn, and I have already learned a bunch by reading for a bit. I have plans to attend the Oklahoma Eggfest in April, and I am going to pick up a large Egg there.
I am going to get a plate setter, v-rack, and cast iron grids to start off with. What are some other have to have items to get started with?

Welcome aboard the egg train. This is a fun forum and the members are very helpful. There are a lot of accessories but one you did not mention is the instant read thermometer. I would recommend the thermopen, pricey but well worth it. I would also recommend mitts that can stand high heat and cover up your forearms. I have a pair of silicone mitts others recommend welders glove.

In my opinion, THE MOST NEEDED accessory is a probe thermometer. Without it it will be hit or miss even on the most expensive (or cheap) cuts.

You will need plenty of Oklahoma Choc Beer! This is an absolute must while tending the egg during rib cooks. Hope to meet you in April.
