Whole Sirloin Tip??

Like a kid in a candy store, the local grocery store had whole sirloin tips on sale so I bought one. The hunk of meat is about 10 lbs. and waiting to be cooked. My wife has this thing about medium rare meat so I am afraid that I am going to have to cook it pretty good--or at least her part anyway. Would this bowling ball be good to pull and do BBQ sammiches or should I cook it quicker and slice. Any thoughts and/or ideas would be much appreciated. Thanks![p]Steve

  • Pug,
This is a lean cut that you can not smoke well with out toughing up. If you start out at 275 to 300º for a short time then dropping pit temp to 225 to 250º. Pull it at 130 to 140º and it will eat real well. The out side will be more done and that should make those that want to go there happy.
