Pig Candy/Raspberry Chipotle

Tried some Pig Candy but added some Raspberry Chipotle sauce with a little rum to thin it and a bit of horse radish. Coated both sides and left overnight in the fridge. Had to use the plate setter to hold the drip pan. Yes, I also had a 50/50 mix of red pepper and brown sugar sprinkled on. Cooked at about 360 for a little over an hour.
Could have gone a little longer for my taste to cook the fat some more. I did find myself going back for more quite often. :)
