Smokin' Fatties

Hi, All --

I usually throw a fatty or two on whenever I've got the Egg fired up for another purpose. I've never actually sparked it just for smokin' fatties. If I've got nothing else happening, I assume my plan is platesetter legs up, drip pan, with hardwood for flavor. What else? Temperature? Time? Mustard? Number of beers?
