Smokin' Fatties

Hi, All --
I usually throw a fatty or two on whenever I've got the Egg fired up for another purpose. I've never actually sparked it just for smokin' fatties. If I've got nothing else happening, I assume my plan is platesetter legs up, drip pan, with hardwood for flavor. What else? Temperature? Time? Mustard? Number of beers?
It's a beautiful day here in the Triangle.

Mike I did exactly that this morning. 250 until meat is 170. It'll take about 3hrs. So that is about a six pack (unless you've had a really hard week, in which case it'll be about 10 beers).
