Pulled out
1 of the rumps and there was a fat cap on 1 side. I will assume it goes on the grill side, otherwise I hope you pipe in. (or others that hopefully are lurking:)

    I'm late help, sorry. I trim the fat off then slow roast. With the fat gone there's more flavor to the meat that I eat. With the fat left on I end up cutting it off at the table anyway. The egg does a great job of retaining meat moisture so its not really needed....unless you want it, that is. If you like a little fat on, grill side is ok.
    Good luck and let us know how it turns out. Remember not to over cook.
