Mushroom Duxelles - how long to cook?

Never Summer

I finally tried making some mushroom duxelles (is that redundant? Is it always made with shrooms?)
Anyhow, this recipe says to cook it for 20 minutes, but it still pretty wet. I looked on-line and it's all across the board - even cook until dry.
Anyone input from someone who's made it before?
Thanks,
Patty

I cook them until the pooled moisture is all gone and then a bit more to get the excess moisture out. What are you makin?

Hey Chuck,
I was looking through the Dec. 07 Fine Cooking Mag and there's an article about making crispy potato pancakes and one of her suggestions is filling them with duxelles. I made the duxelles tonight and will try the pancakes tomorrow night.
Hope they taste as good as the pictures look!
