First Fatties

<p />I smoked 4 fatties yesterday. Two of them I just put rub on them and the other two I stuffed. One stuffed with provolone cheese and the other with cream cheese and roasted red peppers. I had my doubts that they would be as good as everyone claims but I was wrong. They were awesome!

i'm making my first fattie right now....i stuffed it with green peppers, smoked pepper jack cheese and some onions.... the darn thing cracked and is leaking.... will it be ok? i'm smoking it at 250....what internal temp should i yank it out at? thanks! rr

i just pulled my first fatty(sounds weird eh? lol).... this thing is fantastic!.... i'm hooked.... i'm going to have to make another batch of fresh sweet italian sausage this week...i pulled it at 160.... except where the crack is .... the filling is perfect!...thanks to you and the other folks on here for providing the inspiration... ( not only the fatties).... ray..... ps nice slide show!
