I cooked for 3½ hours, then poured apple juice into the drip pan approx. ½ inch deep. I did this in lieu of wrapping in foil. Closed lid, and after 30 min it built up good head of steam, and the aroma was out of this world. At hour 4, I brushed onto both sides a coat of Masterpiece BBQ sauce. At hour 4¾, painted on some more BBQ sauce, and kicked the temp up to 270° until hour 5¼, then pulled off and wrapped individually in foil, and let rest for 1 hr. Then into the freezer till party time. The only other thing I did was spritz with apple juice ever hour from the beginning.
