imortance of wrapping in HDAF after removing from BGE

Hit my minimum temps (breast & thigh) and only waited 10 minutes or so before carving. I found the bird almost too moist and in some areas still undercooked. How important is it (to complete the cooking process) to wrap it in HDAF and for what period of time?

I think the standard advice for any roast turkey is to tent with foil and let it rest 20 minutes before carving. You don't want to wrap in foil and end up steaming it and ruining the skin, just tent it to help keep some heat in.[p]TNW
