I need some tips for cooking spareribs; I've always done baby backs... [p]What's the estimated cooking time??[p]What about the 3-2-1 method, but not sure if this is correct for spare ribs?[p]Thanks for the help...[p]

Richard,
Give 'em plenty of time to cook -like 7 hrs. I used to do only spares but have switched to baby backs because they're easier to prepare and all the leftovers get eaten (When cooking spares I always cooked too much).[p]The membrane doesn't come off as easily as it does on babybacks.[p]You can do something like a 3-1-1, but as I said, figure on more like 7 rather than 5 hours.
