I just bought a place setter for the large egg. I thought it was used for when I roast a chicken or turkey. Do I need it or not? How do I capture the juices from the turkey, by what is on the place setter?[p]Does anyone know how I go about smoking my turkey or chicken? I want to place rub on it and serve it tonight at about 6:00 p.m.

If you are roasting with the plate setter, then the "legs" should be up and the grill grid on top. That said, you can put a drip pan under the grill grid on top of the plate setter in the "well"... however, if you check out the various "Thanksgiving Test" turkey discussions, then you'll find that most folks roast in a pan, like you would in the oven... even for smoked.. the key is to raise the bird off the "floor" of the pan to allow the air to circulate under it..... If the link below doesn't give you enough info, then do a CTRL-F and search for "turkey" on the main forum page... there have been several posts in the past week or so...

well i am not sure where to begin. but the most popular way to to a turkey is Mad Max's Turkey now you could do your chicken that way also or there are several hundred ways of cooking chickenHere are a couple[p]do you need a plate setter ABSOTLUTLY!! or fire bricks or some other type of heat barrier. the plate setter will be invaluable to you as time goes on. [p]welcome [p][p]

The plate setter is used to give you indirect heat. You can cook poultry direct or indirect. Take a look at TheNakedWhiz's site for all sorts of good advice. Three links below. You just put it "legs up" and put an aluminum drip pan either under the grate or put the turkey in the drip pan on a rack.
