Does anyone have a recipe for an apple side dish? We need to take something to a party tonight.[p]Thanks in advance.[p]JCA

J Appledog,[p]Keri C's hog apple beans come to mind, the apple pie filling is key to her recipe, it's just not a dedicated "apple" side dish.[p]Candy Bar Apples are really gooooooood. Again, they are a dessert not a side. If there is any Calvados on board, it is a wonderful accompaniment.[p]~thirdeye~

J Appledog, how about this one:
Apples Grilled In Parchment Paper
2 Granny Smith apples
1/2 cup dried cranberries
1/4 cup maple syrup
2 tsp light brown sugar
1/2 tsp ground cinnamon
2 Tbs unsalted butter, divided
1 Quarter apples through core. Remove and discard core, then cut quarters into thin slices. Place slices in medium bowl. Add cranberries, maple syrup, sugar and cinnamon. Stir to combine.
2 To make packets: Cut 4 pieces of baking parchment paper, about 12 by 15 inches each. Spoon 1/4 of apple mixture into center of each piece and dot with 1/4 of the butter. Bring two long ends of each piece of paper together and fold over several times to seal top of packet. Twist other ends of paper in opposite directions to close packets.
3 Grill packets over direct medium heat for about 10 minutes. Serve in packets or pour mixture from each packet into a separate bowl. Either way, serve with ice cream, if desired.
4 This recipe yields 4 servings.
5 Per serving: 197 calories, 0g protein, 6g fat (4g saturated), 37g carbohydrate, 4mg sodium, 16mg cholesterol, 2g dietary fiber.

Apple, Pumpkin and Ham Casserole[p]I am trying to remember here, but rather than sweet go with savory.[p]Cubed fresh pumpkin or squash
Cubed an apple (or slice it)
Slice an Onion
Ham, chunks or slices[p]Put in a casserole dish with some salt and pepper and maybe a little chicken broth for moisture. I guess that you could even dot it some butter.[p]Bake covered at 325 until the pumpkin is tender, maybe an hour or so.[p]Hope this helps,
