Gonna TRY something new 2nite LOL

First thing is gonna be a spatchcock chicken with a latina gaze, chipotle peppers in adabo, garlic, cilantro, bunch of honey, basalmic vinager and grainy mustard and a touch of veg oil all put into a blender. Been wanting to do a spatchcock chicken for awhile and HOPE it's not to hard to do . we'll see though. then gonna grill some red potatoes, onions and pablano peppers and mash like you'd do for regular mashed potatoes and also some grilled corn with lime, culantro butter. SOUNDS good to me BUT we'll see for sure LOL If you don;t hear back form me on this, that means it was ummmmm OK IN THE GARBAGE hehehehe

Sounds fantastic! I rarely do chicken any way other than spatchcocked. It's super easy to prep and hard to mess up. Your glaze should be great. Let us know how it turns out.[p]Paul

DonDon,[p]Spatchcock'd chicken is really quite easy. Hardest part is cutting the bird up. [p]I usually rub, but don't think I've ever glazed, because I like crisp skin. The glaze sounds good, tho'. Could even be used as a dipping sauce.[p]I recently roasted potatoes, corn, and garlic, and mashed them all. Was really good, everyone had seconds. Grilled corn is most likely to be fine. I'd guess the only thing in the garbage will be the bones.[p]gdenby
