Lamb chops & White sweet potatoes

Morning All:[p]While at the store on Sunday we saw some WHITE sweet potatoes and just had to try them. Also, at Sam's found some nice looking lamb chops. Decided they sounded like a good combination (turns out they were).[p]Prepped the sweet potatoes like usual...split lengthwise, poke some holes in them, spread ample amounts of butter, sprinkle with cinnamon and wrap in HD aluminum foil. These went on the Egg first at about 370 dome temp. After about an hour on went the lamb chops:[p]P8280001.jpg[p]Dome temp had crept up to about 400 now. The lamb chops had been in a ziplock bag with 1/4 cup balsamic and 1/8 cup honey for about 45 minutes (should have gone longer, maybe 2 hours). They went on direct on the main grid. Here they are after the first turn (about 4 minutes).[p]P8280003.jpg[p]Brushed on more of the Balsamic/honey mixture and turned again. Looking good![p]P8280005.jpg[p]Plated with the sweet potato for some very good eating. The sweet potatoes had a little bit lighter taste than normal ones, but still the same sweet potato taste. Internal temp on the chops was 130 to 135 on all of them...just right![p]P8280007.jpg[p]This one is definitely worth doing again![p]Have a GREAT day!
