Argentinean Steak with Red Quinoa Pilaf

It has been a while since I have been able to go on a good grocery shopping trip, so the staples are getting low. Therefore, I am left with the stuff that I don’t remember buying but sounded neat at the time. I dug through the freezer and found some small sirloin steaks. I want to do something a little different, but simple nonetheless. I reached for a different cookbook, Steve Raichlen’s Healthy Latin Cooking. [p]I first found the recipe for the Argentinean Mixed Gill and adapted it to my needs. While I defrosted the steaks, I made quick marinade of Dry Vermouth, lemon juice, olive oil, thin sliced onion, garlic, salt, black pepper, dried oregano and a some red pepper flakes. I put the steaks in the marinade and set the bowl aside. [p]I then fired up the medium egg to get it ready for turbo mode.[p]After that, I started on the Quinoa Pilaf. I fried some onion, red onion, garlic and pablano pepper in some olive oil. I did not have any pine nuts as the recipe called for so I chopped some almonds instead. I added the Red Quinoa and used chicken broth instead of water. I also added the salt and pepper.[p]I seared the steak for four minutes on the first side and then I when I flipped them I placed the sliced onions on top of the steak and basted them with some of the remaining marinade, let them finish searing for four minutes and the let the steaks dwell for another 4 minutes. When I brought the steaks to the table I squeezed some fresh lemon juice on them.[p]The meal was rounded out with some frozen corn to which I added some butter, ancho powder ands a squeeze of fresh lime juice.[p]The entire meal took about an hour from thought to table.[p]It ended up as a very flavorful meal that everyone enjoyed.[p]Just sharing,

Yes, the recipe was also in the book. The liquid seemed high or the cook time low. Regardless, it was a very good meal.
