A cool friday mornin in northern Virginny, and the air is fragrant with aromas from a chunk-o-chest...and some cherry wood. Now at 163 internal, this baby is plateauing (that is a verb...eh?). Decided to cook this baby a little slower, since it was only 4 pounds, and I wanted to sleep through the night. Also wanted to turn in early last night, so I put 'er on at 9:30, starting at 200, and slowly working up to 225 overnight. Sho nuf, the dome temp was riding steady at 225 when I woke up this morning. MikeO, and a couple other buddies are coming by to help me dig into this baby at lunchtime.[p]I wonder how it would taste if I glaze it the last hour with MikeO's Habenero Jelly that I still have?[p]Great Friday to all.
