last night's dinner - Beef Wellington & king crab

AlaskanC,[p]WOW! That Wellington is beautiful. Nice job.[p]Can you harvest those crabs yourself or do you have to buy them? Obviously we will never see the likes of that in Florida but it looks awesome.

I'll bring my home made mustard and good Wisconsin I.P.A. beer so we can eat leftovers...if there is any. Gosh, that crab just fits. Fold in the arms, push the head down and he's in.

Thanks Ray! [p]We usually set pots out for the crab in the summer - it's just too nasty this time of year to get out there and do it. The crab we bought last night was a golden king crab, and they are caught quite a bit further north of here by the commercial guys.[p]I can't wait 'till summer so we can get out there and set the crab & shrimp pots![p]

Outstanding effort on the beef!!! Really great results and picture. I visited Alaska a little over 20 years ago and we bought fresh king crab and cooked them in sea water. Finally just had to stop eating. Still had a piece in the butter and could not make myself eat it. All in all, it was one of my better days.

Mike - I found a recipe on allrecipes.com that worked pretty good. I did the initial cook on the egg, but then finished it in the oven. I didn't have any pate (plus I don't like pate) so I used some pre-made pesto instead. It really added a ton of flavor. It was not hard to make at all!

Dat der is a crawdad, crawfish, mud bug, etc. And it would take a hell of a lot of them to make up for one of those beauties of yours!!! Straight out of the swamps of the Atchafalya!
