How to smoke a goose
Options
My butcher has found himself up to his neck in geese. Being the opportunist, I am tempted to take one off of his hands, and throw it on the egg.[p]I smoke chickens all the time, and have smoked duck with great success as well, so I thought it would be worth a shot. However, the success of my previous efforts has been largely based on the information from this group, so if any of you have Egged a goose, please point me the right way.[p]Thanks

Essex County,[p]Thanks for the link.[p]I see that folks are saying to cook direct. I have done duck indirect, and would think that you would want to catch the grease to avoid too much of a grease fire. Thoughts on that?[p]TIA,[p]20stone
