First brisket cook..Patience....

Well put our first brisket on at 9:38 this morning, temperature was 5 degrees outside.
It's only a 5 lb. flat so I figured it would be done around 1.5 hrs. per pound...WRONG!.
It's been on for 8:45 minutes and it is at 163 degrees. It reached a temp. of 152 then fell back to 150 and stayed there for at least 2 or 3 hrs.
One thing I've learned is if I start doing low and slow I'm going to have to get a Guru.

gadjetman,[p]You have a few more hours to go. A flat usually takes me 10 to 12 hours depending on what temperature I'm cooking at.

gadjetman, a guru is nice, but you can get by with a Maverick. That way you can monitor the grid and meat temps without getting out in that 5* weather. Patience is the key, and it sounds like you've got it.

gadgetman,[p]Update, This is crazy, The temp went up to 170 and then dropped back to 161.
I doubted the probe so I checked it with my instant read thermometer and is is on?

It's now nearly 13 hr.s into the cook and 10:32 pm. I want to go to bed. I could care less about the brisket in the Egg. That is all.

Did the brisket finish? Sorry to hear about the time. I went through that with a few cooks. I'll do another brisket pretty soon but I will put it on the fire around 11 or 12:p.m. Don't give up. Hope all your cooks get better. AZ
