    Skin was on. Forgot to spray the screen so it stuck but no big deal, we don't eat the skin. Started at @250 dome to get some smoke then bump to 375-400 for @15 min. Alder smoke. Was done just right not over cooked. Taste was ....BGE

    the only thing that could make it better is if you caught it or speared it![p]lookin at that first pic there... i woulda used the raised grid to get it away from the fire a bit... but that's just me. and what the heck do i know... i've never cooked red snapper on my egg

    They sell them at the grocery store for .99 for cooking fish and vegies or anything that needs the support...Fatties and such.

    To me it looks like that fish didn't mind being close to the fire at all. Looking at the color anyways. Further away it probably would have not had as much color. Just thinkin here.

    Rick's Tropical Delight,
    Seemed to do fine. The fire wasn't too big and i controlled it closely. The cost of chatching them your self is much more dollar wise than buying them. But i do have to say i do enjoying going out to deep water on occasion. Here that's about 50mi. offshore.
